Peanut Butter Mocha Crunch Bars Recipe

This homemade candy bar recipe only requires five ingredients and almost zero work: microwave some stuff, toss in some other stuff, and spread it in a pan. The end result is that winning combination of peanut butter and melted chocolate, with crunch for texture and coffee for complexity.

Ingredients

  • 1 1/2 cups semisweet or bittersweet chocolate chips
  • 1/2 cup creamy peanut butter (such as Jif or Skippy, not natural peanut butter)
  • 2 tablespoons instant espresso powder
  • 1 1/2 cups puffed rice cereal
  • Espresso Bean Sugar

Instructions

  1. 1. Line a 1-pound loaf pan with parchment paper on all sides.
  2. 2. In a large microwave-safe bowl, combine the chocolate chips, peanut butter, and espresso powder. Microwave in 30 second increments, using a silicone spatula to stir between each, until the mixture is fully melted.
  3. 3. Remove from the microwave and use the silicone spatula to gently fold in the puffed rice until evenly combined. Transfer the mixture to the prepared pan, spreading evenly to the edges. Place in the fridge until the bars are set, 40-45 min.
  4. 4. Use the parchment to lift the bars from the loaf pan, then peel away the parchment. Transfer the bars to a cutting board, cut crosswise into 8 large bars (or cut those in half for smaller bites), and sprinkle the espresso bean sugar on top of each bar. Enjoy!
